Homogenisation is a process, which involvesblasting milk under very high pressure through a really small hole. Now, thissmashes up the fat particles1 into tiny little globules, and this prevents thecream separating from the milk. Homogenising makes the fat globules muchsmaller and mixes them into the milk.
