Sweat potatoes contains
fiber1, vitamin A and
calcium2, but the way that scientists think they can make them even more healthful is
literally3 shocking. Researchers found that giving a
jolt4 of electricity to sweet potatoes increased the level of antioxidants known as polyphenols by sixty percent. The
investigators5 placed sweet potatoes in the solution of
sodium6 chloride. They found that zero point two amps direct current gave the potatoes nearly one and a half times more antioxidants than potatoes that weren't shocked. The research was presented at the national meeting of the American Chemical society.
It seems that electric zap stressed the potatoes into produce more polyphenols as protective
mechanism7. And the treatment did not sacrifice flavor. Previous research has shown that electrically super charging white potatoes increases antioxidant levels. So perhaps it is only a matter of time before other fruits and vegetables get shock therapy, too.
